These mini apple galettes have buttery flaky crust topped with thinly sliced apples on a bed of apple compote and have the edges folded giving a rustic style.

Ingredients needed: - Flour - Cold butter - Cold water - Apples - Apple sauce - Cinnamon - Demerara sugar

Preparation: 1. In a mixing bowl, mix butter & flour together until it crumbles.

2. Gradually add water until the ball is smooth. Don't overwork the dough! Place it 30 min in the fridge.

3. Wash & cut apples in quarters. Slice out the core and thinly cut the apple into slices.

4. Spread a tbsp of apple sauce on the pie crust & add the apple slices.  5. Fold the rim of the dough up & over the edge of the slices.

6. Mix egg yolk & a tsp of water. Using a baking brush, brush the folded side & sprinkle with sugar. 7. Bake for 25-30 min.

8. Make the whipped cream with heavy cream, honey and cinnamon.

9. In a large bowl, pour heavy cream, honey & cinnamon. Using an electric whisk, beat the cream until firm (about 2-3 minutes).

10. Scoop a generous portion of honey whipped cream & place it on top of the apple galette.
