Preparation: 1. Wash and chop baby spinach and thyme. Set aside.

Preparation: 2. In a mixing bowl, add spinach, thyme, crumbled feta & parmesan. Stir well.

Preparation: 3.Take puff pastry sheets & on a baking sheet, cut in third in length & width to obtain 9 squares/ rectangles. 4. Bring the edges to create a border, about an eighth of an inch.
