Yummy Peanut butter Almond Flour Cookies

Soft and chewy, these peanut butter almond flour cookies are the perfect answer to your cravings. An easy recipe, made with simple ingredients from your pantry, indulge with this gluten-free cookies with an amazing peanut butter flavor.

Ingredients

  • ½ cup peanut butter smooth
  • ½ cup butter soft
  • 1 cup granulated sugar
  • 2 eggs medium size
  • 1 teaspoon vanilla extract
  • 1 and half cup almond flour
  • ½ teaspoon baking soda
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup oatmeal
  • ¼ cup dark chocolate chips optional
  • ¼ cup crushed unsalted peanuts optional
  • ¼ cup sliced almonds optional

Instructions

  • In a bowl, mix the granulated sugar, soft butter, and the peanut butter. Whisk well until you get a smooth mixture.
  • Add in the eggs one by one and mix some more. Add the vanila extract.
  • Next, add baking soda, salt and baking powder and also the almond flour.
  • The dough is a little thicker now and you just need to incorporate the oats.
  • Chill the dough in the fridge for an hour and relax.
  • A few minutes before taking it out from the fridge, preheat your oven at 400F. And, prepare a baking sheet with some parchment paper or a silicone mat.
  • Using an ice cream scoop, take some cookie dough and place it on the baking sheet. Allow some space between the cookies.
  • Optional: add the topping of your choice: chocolate chips, almonds or peanuts.
  • Bake 10-11 minutes. When you remove your baking sheet from the oven, wait 5 minutes to manipulate the cookies as they will be fragile to transfer them on a cooling rack.
