French Savoury Chorizo Madeleines

These French Savoury Chorizo Madeleines are soft and cakey, loaded with comforting flavors of sausage and melted cheese. They’re perfect as a savory tea-time snack or party appetizer.

Ingredients

  • 3 eggs medium size
  • ½ teaspoon salt
  • ½ cup all purpose flour
  • 1 stick butter melted and cooled
  • 1 teaspoon baking powder
  • cup chorizo shredded
  • ½ cup parmesan shredded
  • pepper optional

Instructions

  • Melt the butter and side aside to cool down.
  • In a bowl, mix the eggs and salt (and pepper).
  • Sift the flour and baking powder and make sure there are no lumps. Add the butter. Mix well.
  • Shred chorizo using a cheese grater and add to batter. Mix and add parmesan.
  • Allow the preparation to rest in the fridge for 30 min to an hour.
  • Preheat the oven at 420F.
  • Put one tablespoon of the mixture in each madeleine mold and place in the oven at 420F (220C) for 6 minutes and drop the temperature to 350F (180C) and bake another 6 minutes.
  • Take out of the oven and allow to cool.

Notes

  • Do not skip chilling the batter in the fridge. The changes of temperature create a choc and this is how you obtain the famous hump. 
  • You can skip the parmesan if you wish, it is as delicious without it. 
  • Allowing the butter to cool down prevents the batter to 'precook' (if the butter was really hot).
