This homemade Bone Broth Instant Pot recipe is easy to prepare in the Instant Pot and full of flavor from a whole chicken carcass, turkey, or even beef. Prepared in the pressure cooker, it takes little effort and 2 hours to obtain this stock and spread the smell in your house.
You can make this nourishing Instant Pot bone broth from your whole roasted chicken carcass. It will be a great starter for your soups and any other cooking. Before discarding an ingredient, you can often make the most of it such as my vegetable scrap broth.
Let's get started now, you have your chicken bones, let's make Instant Pot chicken bone broth. Once you made bone broth yourself, you will not be able to go back to shortcuts.

🔪 How Do You Make Bone Broth In The Instant Pot
The preparation is minimal. Put your bones in the Instant Pot (IP), chop carrots, onions, and celery, and add some herbs for more aroma. You don't need to spend time chopping nice and regular, just wash your produce and grossly cut them.
Then, add them to the bones in the IP. Fill with water up to the limit and add a splash of apple cider vinegar. Program to ''Broth/Soup'' for a pressure cooking time of 120 minutes. By selecting this, it will automatically be set on high pressure. Once it is done, your electric pressure cooker will beep.
Then, you can do a quick pressure release by pressing the quick-release button and the steam will come out of the valve. It is really hot, be careful. If you don’t do this right away, your IP will go on ‘keep warm’ mode and start a natural pressure release. It takes longer but if you are doing something else, it is doing the job for you.
Finally, get an empty bowl. Using a strainer and a ladle, pour the broth into a jar. Repeat until you are done. Discard the bone and the vegetables into the bowl each time your strainer is too full.
Lastly, wait until your bone broth has cooled completely before closing the Mason jars.

Yes! It will take longer. You will need to increase your cook time to 6 or 8 hours. By definition, it is a slower process but your chicken, turkey, or beef bone broth will still taste great. However, the result will be the same as the Instant Pot broth.
The acidity of the vinegar helps to break down the collagen which will make broth rich in collagen. That being said, I have made broth without it before and still get gelatin (collagen) out of the bones.
You may have had too much water for your bone ratio. The bone broth recipe calls for a pound of the carcass but if you don't have that much you can either freeze your bones for later (save them until you get more) or add less water in your Instant Pot. Your broth is still good though!
Of course! You can either use raw or cooked bones. You can add the turkey carcass from Thanksgiving or your December Christmas dinner. Also, you can get some great beef bones at your butcher for little money. Lastly, of course, chicken bones are amazing for bone broth.
- Fridge: Once completely cool down, your broth will become jelly and a layer of fat on top will protect it. You can store it for up to 5 days.
- Freezer: You can either keep it in jars so you have portions ready to go as you need. Also, freeze it in an ice cube container and add it to your sauces.
You can but you will not get as many nutrients as the first batch. It might be less flavourful. I would recommend making a vegetable stock then.

📋 Bone Broth in the Instant Pot
Equipment
- Instant Pot (6 quartz)
- 6 jars of 12oz
Ingredients
- 1 pound Chicken carcass
- 2 onions medium size
- 3 carrots big or 3 smaller
- 3 celery branches
- 2 bay leaf
- 3 branches of fresh herbs or dried such as romary, thyme, or marjoram
- 1 tablespoon apple cider vinegar
- Water to the 'Fill limit' in the inner pot
Instructions
- Take your Instant Pot (IP), place your chicken/turkey (or any others) bones in the IP.
- Wash your produce and chop them grossly, no need to peel the carrots. You can leave the peel of the onion if you wish. Add them to the IP.
- Add the herbs, bay leaves and the apple cider vinegar.
- Fill with water up to the limit (inside the inner pot, there is a line and it is written 'max fill').
- Turn your Instant Pot on, press ''soup/broth" and programme for 2 hours.
- Once the 2 hours are up, press the little valve on top to do a rapid releave of the steam. Once unlocked, open the IP and wait a little for your broth to cool down.
- Finally, get an empty bowl. Using a strainer and a ladle, pour the broth into a jar. Repeat until you are done. Discard the bone and the vegetables into the bowl each time your strainer is too full.
- Wait until your bone broth has cooled completely before closing the jars. If you intend to freeze, don't fill the jar completely as the liquid will expand and it will break your container. Freeze or store in the fridge up to 5 days.

For starters, this was a simple recipe which was great, used the leftovers from Costco rotisserie…. The aroma is intoxicating. Definitely take the advice to let the broth get to room temp before freezing (especially).

Your blog mentions water but there's no mention of water in the actual recipe. Thought it was odd to not add any liquids, except a tablespoon of cider vinegar, but double checked recipe and not listed so I didn't add it...just finished making it and only have about 2 cups max of broth. Guessing it's too late to add water now?
