    Triple sec rainbow cocktail in 5 minutes!

    Let's call it this way!  It was a rainbow before it went in the blender.   Bright sweet-smelling yellow pineapple, red juicy watermelon, the blue flavorful blueberries and... AND the cool green mint.  See?  A rainbow.

    Triple sec cocktail

    Yesterday, it was Monday, it was Bastille Day for French people so I figured that a boozy cocktail, a few crackers, and cheese would be a perfect way to make a happy hour and start the week.

    How do you relax at the end of the day?  Do you watch TV?  Do you do some sport (Note to self: I should think of that one day...)?  Do you sit on your patio with a drink and your better half? Yes?  Alright, we are going to get along just fine! :)

     I might have added something water-looking in this fresh juicy blend...  Some triple-sec.  Needless to say, it was a perfect addition to the fruity juice.

    I saved some cocktails, still virgin for the kids, and we were a happy family on happy hour!  Does it get any better than that?  We tend to relax on Friday night after a week but how about we boost ourselves through the week?  Plus, it is summer.  We earned it after this Canadian winter.

    Oh!  And the inspiration came from my friend, S., we spent a wonderful day with her and her hubby Saturday.  She prepared yummy food.  I made some quiches, individual size, just perfect for picnics.  And, she prepared some delicious and refreshing agua fresca (watermelon, mint, and vodka).  I felt like another juicy alcoholic drink.

    Rainbow cocktail

    Triple Sec cocktail with pineapple and blueberry

    Ingredients

    • ½ cup fresh pineapple
    • 1 and half cup fresh watermelon
    • 2 cups blueberries
    • 1 handful fresh mint
    • 1 ounce triple sec

    Instructions

    • - Put all the fruit and mint in a blender and mix until smooth.
    • - Pour the juice through a strainer if you don't like pieces of blueberry skin or mint.
    • - Keep refrigerated until served.
    • - For every ½ cup or 4 ounces of juice, I mixed with 2 tablespoons of tripe sec.
    • - Pour in a glass, seat and enjoy!
