What Is Ratatouille?
Ratatouille is a French Provencal vegetable stew made with seasonal vegetables and herbs. Slowly simmered, full of flavour, you can enjoy this dish warm or cold.
It is the perfect summer side dish for grilled meat or fish. You can also serve it with a sunny side egg to make it a vegetarian meal.
On its own, ratatouille is a vegan and gluten-free dish which makes it the perfect dish to gather all different types of diets around the table.
Which Ingredients Do You Need?
Oh the summer vegetables! The vibrant colour and the best ingredients you will need. Zucchinis, red and juicy tomatoes, eggplants, peppers, and some onion.
Of course, adding some herbs just makes the French ratatouille complete!
I would recommend doubling the recipe while you are at it. The French ratatouille recipe is really easy, you will need a little bit of time to do some chopping but then, you throw everything in the pot and let it cook on low for 20-25 minutes.
I use dry Herbes de Provence but I would recommend some fresh rosemary or thyme. Fresh is always the best way to go but we don't always have it on hand.
How Do You Make The Ratatouille Recipe?
This is really a 2-step recipe. Chop chop chop, put in the pot, and let it do its magic.

Batch cooking? Prepare it in advance and reheat your dish. The flavours would have deepened. Ratatouille can be stored for a few days in the fridge as it only contains vegetables. It also freezes well. If you are into canning, you can store ratatouille in cans as well.

Easy One-Pot French Ratatouille
Ingredients
- 5 cloves of garlic minced
- 1 Onion chopped
- 1 Yellow pepper diced
- 3 Large tomatoes grape diced
- 1 Eggplant diced
- 2 Zucchinis diced
- 1 tablespoon Olive oil
- Salt to taste
- 1 and half teaspoon Herbes de Provences or rosemary, thyme
Instructions
- In a large pot, low heat, pour the olive oil. Add the garlic and onion. Then, the pepper.
- Add the tomatoes, the eggplant and the zucchinis. Stir gently with a wooden spoon.
- Add salt and the Herbes de Provence.
- Let it simmer at low heat for 20 minutes, half covered with a lid or until the vegetables are cooked but not mushy.
