    Soft and chewy, these Peanut Butter Almond Flour Cookies are the perfect answer to your cravings. An easy recipe, made with simple ingredients from your pantry, indulge with these gluten-free cookies with an amazing peanut butter flavor. There is almond flour but also oats which makes them packed with fiber but still low carb.

    By now, you know my crazy passion and obsession for almond flour anything and these almost like chocolate chip cookies have become my favourite! Well, I still love my shortbread almond cookies. I can't choose! On these ones, you can either add some chocolate chips, almond slices, or peanuts. I really loved adding some dark chocolate, you know I also have a thing for chocolate.

    These are not your regular peanut butter cookies, there are moist almond flour peanut butter cookies with a great texture thanks to the oats. I added dark chocolate and became almond flour peanut butter chocolate chip cookies!

    📋 Ingredients And Utensils I Used For This Simple Recipe

    Almond Flour: I buy this one as I use it a lot and it is the best price.

    Oatmeal: This is the gluten-free one I use as I like to control my intake of gluten (some days!)

    Silicone Mat: So practical and reduces the waste with parchment paper.

    Ice Cream Scoop: So practical to get same size cookies.

    🔪 How Do I Make These Cookies

    If you like to have children help in the kitchen, this is a great opportunity. This cookie dough comes together in no time.

    First things first, grab your granulated sugar, soft butter, and some creamy peanut butter. Whisk well until you get a smooth mixture. Add in the eggs one by one and mix some more. Next, add baking soda and baking powder and also the almond flour. The dough is a little thicker now and you just need to incorporate the oatmeal.

    Now, you can place your bowl in the fridge for an hour and relax. A few minutes before taking it out from the fridge, preheat your oven. Also, prepare a baking sheet with some parchment paper or a silicone mat.

    Using an ice cream scoop, take some cookie dough and plate it on the baking sheet. Allow some space between the cookies. Now have fun and add some topping. This is an optional step but I don't skip it as I really love the combo with some dark chocolate chips.

    To obtain, soft on the inside and crispy on the edge, these peanut butter almond cookies only require 11 minutes in the oven! Once baked, allow to cool at room temperature on a rack, if you can wait! I love warm cookies when there are breaking in your hand!

    Almond Flour, Almond Meal, Ground Almonds: Is It All The Same?

    Yes! There are all finely grounded almonds. All these ways of calling it are correct. It can be done with blanched almonds which means their skins have been removed before or turned into the flour with the skin on (unblanched).

    You can make your own almond flour by pulsing whole almonds into your blender.

    Is Almond Flour The Healthiest Flour?

    While coconut flour is the healthiest flour, almond flour is right behind it on the list. I, personally, do not consume almond flour to follow any diet but simply because I’m obsessed with its taste. Almost anything made with it (to play it safe!), I’ll eat it. You should know that about me by now :)

    It is particularly used for keto, paleo or, gluten-free recipes. If you are following a low-carb diet, this is the flour with the lowest net carbs.

    NOTE: This shortbread cookie recipe is not a keto-friendly option as it is not sugar-free or dairy-free.

    💭 Baking FAQ

    Can I substitute the almond flour for plain flour?

    This recipe has been developed with almond flour, I would recommend sticking to it the way it is.

    Should I use brown sugar than granulated sugar?

    Absolutely, the sweetness will remain the same. I tried it too and it is as delicious. Brown sugar adds more moisture. You can also try with monk fruit sweetener, I have not tested the recipe with it though.

    Can I use crunchy peanut butter? How about almond butter?

    You can try. However, this recipe was developed with smooth natural peanut butter.

    Can I freeze these almond flour peanut butter oatmeal cookies?

    Absolutely, it is a great make-ahead recipe. Freeze them just after scooping the raw cookie dough on the baking sheet. Once frozen, you can store the cookie balls in a container or freezer bag.

    How long can I store the cookies?

    You can keep them in an air-tight container at room temperature for a week or so. It will keep them soft with crunchy edges. Hot tip: Add a slice of bread in the container, it will keep your cookies like day one!

    Ingredients

    • ½ cup peanut butter smooth

    • Using an ice cream scoop, take some cookie dough and place it on the baking sheet. Allow some space between the cookies.
    • Optional: add the topping of your choice: chocolate chips, almonds or peanuts.
    • Bake 10-11 minutes. When you remove your baking sheet from the oven, wait 5 minutes to manipulate the cookies as they will be fragile to transfer them on a cooling rack.
    • ENJOY!

      I love the taste of this recipe but I wanted to let you know that your instructions do not state where to add the vanilla extract or salt. As a result I totally missed the salt untill it was too late but luckily they still turned out well
